Lincoln-Lancaster County Genealogical Society Newsletter 33:1 (January 2008) has an article that discusses scanning dos and don’ts. Its major point (and one worth repeating): scan photos at a high resolution (300 dpi is recommended), and always assume that you’ll want to publish the photo at some point. If you should need to send that scan to a friend or relative, or to place it on the web, you can always make a copy of the original scan and then make any necessary changes in size / resolution to the copy.
